Welcome Stacey! (summer intern)

Hi, my name is Stacey Gross and I am interning for June this summer at Chester County Nutrition. She has generously opened her doors and drawers (file cabinet drawers filled with handouts galore) allowing me to shadow her during information-filled sessions with clients. This is an amazing learning opportunity for me before I step out on my own to develop a career in nutritional counseling. Thank you for sharing your personal experiences with me.

 

You might be wondering where I come from and what’s my story? Here is a little bit about myself:

 

Currently Attending: Nutrition Therapy Institute in Denver, CO as a distance learning student.

 

Degree: Master Nutrition Therapist Diploma

 

Also Attended: Michigan State University in East Lansing, MI.

 

Degree: BA of Social Work

 

Current City: East Fallowfield. I am lucky to be living on a horse farm surrounded by green rolling hills and small chemical-free farms. Buying and cooking local produce, in-season is one of my favorite things. 

 

Previous Cities: I recently moved to PA from Colorado where I lived in Crested Butte for six years and Boulder for three years.

 

Favorite Ways to Stay Active: yoga, Pilates, hiking, biking, walking my dog, and skiing when available.

 

Favorite Month: September. Fall is just beginning so there is a pleasant mix of warm and cool days. Plus, it is my birthday month, birthdays represent mile stones, an indicator of the passing of time and a reminder to evaluate goals. What did I do well this year, what did not end in my favor, what do I still need to work on?

 

Favorite Cooking Utensil: Chef’s knife. Learning to chop, dice, and slice consistently and quickly makes healthy, vegetable-rich meal preparation enjoyable.

 

Favorite Website: www.mindbodygreen.com - it is full of health-centric articles.

 

Favorite Food/Drink: Home-brewed kombucha. I wish it would ferment faster because I could drink a gallon a day.

 

Favorite Ingredient (Currently): Go Raw Sprouted Pumpkin Seeds. They are tasty on top of salads, sautéed zucchini or greens, and mixed into tuna salad. Since these pumpkin seeds are sprouted, more nutrients are available for absorption including protein, folate, zinc, magnesium, and selenium.
